Kayseri is a large Anatolian city at the foot of Mount Erciyes, the highest mountain in central Türkiye, and the main gateway to Cappadocia by air. It has Seljuk monuments, a castle in the middle of town, a strong food culture and a ski resort on its doorstep. Many visitors pass through the airport without stopping. A night here is enough for the old center, the food and a day on the mountain.

What to see
Erciyes
Erciyes is the highest summit in Anatolia, at 3,916 meters. The ski center is about 25 minutes from Kayseri Airport, 20 minutes from the city and about 60 minutes from Cappadocia. The winter season runs from 1 November to 1 May, with a longest track of about 3.5 km and 14 mechanical lifts. Snow is reliable, and the slopes are quiet compared with the Alpine resorts. In summer, the mountain is for walks.
The center
The old center has the castle and the Hunat Hatun Complex, a Seljuk mosque and madrasa that anchors the historic quarter. Look for the stone Seljuk tombs scattered around the city and the covered market.
Food
Kayseri is known for mantı, small dumplings with yogurt and spiced butter, in varieties such as Çerkez and tray mantı, and for pastırma, the air-cured beef that is a Turkish staple. Buy pastırma and sucuk from a local shop. See our food guide.
Kayseri in a day (suggested plan)
- Morning. The castle and the Hunat Hatun Complex, then the bazaar.
- Lunch. Mantı.
- Afternoon. A drive up Erciyes, or a transfer to Göreme.
When to go
Kayseri has a continental climate at about 1,000 meters: hot, dry summers and very cold winters, with January lows near minus 7°C. Spring and autumn are the best seasons for sightseeing, and winter is the season for skiing.
